Pop-Up Bakery…What is That ?

A new spin on the age-old lemonade stand, pop-up retail is a popular and growing trend. Storefronts have their place, but with growing online purchases, social media marketing, and farmers markets, entrepreneurs are able to break into the retail scene through ‘pop-up’ endeavors without the overhead of a permanent location. Capitalizing on current consumer demands, pop-up bakeries are making a splash here on the Coast.
Long-time local Aleesha Nedd of The Naked Lemon bakery has been creating delicious delicacies in our community for years as an employee at Coffee Girl, but has recently launched her own baking business. After graduating from Astoria High School and receiving a degree from Portland State University she returned to the Clatsop County workforce and fell in love with baking and the process of how pastries are made. “the world of baking is such a creative world of design and science all wrapped together. I’m always learning something new or a better, more efficient way of executing a recipe.” Nedd explains. Her latest project has been The Naked Lemon pop-up sale at Vintage Hardware in Astoria throughout February and she has plans to be at the Astoria Sunday Market part-time this summer.
