Bacon is the only food that can turn a vegetarian into a drooling carnivore. There are scientific reasons why we’re stimulated by this most perfect of breakfast meats. Bottom line, it tastes and smells remarkable! There’s more to it than acting as wing man to eggs.
BACON CHEDDAR CORN BREAD
1 cup of flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon of baking soda
½ teaspoon salt
1¼ cups yellow corn meal
1½ cups low-fat or regular buttermilk
1 large egg
1 cup grated sharp cheddar cheese
5 ounces cooked bacon in small pieces (4 to 6 slices)
2 tablespoons unsalted butter, melted
Softened butter for greasing pan
Sift flour, sugar, baking powder, baking soda and salt into a bowl. Add cornmeal and mix well. Mix buttermilk, egg and butter in a separate bowl. Pour flour mixture over buttermilk mixture and stir slowly until combined. Add bacon and cheese and stir. Pour into a lightly greased 9-inch pan and bake at 400 degrees for about 20 minutes. After it cools, slice into squares.
